Hello Millar Family!

I set up a Millar Family Favorite Recipes Blog, so that if we are looking for a recipe that one of our family members makes we can find it here! I thought it would be a good way to keep them all together, and have easy access to them. I know I'm always miss placing the recipes I write down, so for me this will be helpful, and I won't have to bother you all every time I need the recipe AGAIN. Also when we have our get togethers and some one says, "oh that is so good, can I get the recipe?", we can just put it on here and its there for all of us to access! Or if you come accross a recipe that is just to good not to post, put it on :) I hope you all will contribute to it. With so much distance between us, our food blog will make it easy to share recipes with each other.
* There is a request column on the side so any one wanting to request a recipe from someone just type whom your request is for, what the request is, and who the request is from.
*Also be sure to give credit to who the recipe is from, and then at the end of the recipe put your name so we know who put it on here:)

Candied Coconut Sweet Potatoes

Ingredients:

4 C. mashed sweet potatoes (4 med. sweet potatoes or act 2 large sized cans)
6 Tbs sugar
6 tbs butter, softened or melted
2 eggs, beaten
1/2 can sweetened condensed milk (eyeball it)
1 t vanilla

Topping:

If you're feeling naughty you can 1 1/2 times this part :)

1 C brown sugar
1 1/2 C sweetened coconut flakes
1/2 to 1 C. of large chopped pecans
6 Tbs melted butter

Note: You can make these up to a day or two ahead of time, just keep them well covered in the fridge and don't put the topping on until just before baking.  If using fresh sweet potatoes, preheat oven to 400 degrees.  Prick each sweet potato with a fork and place on foil in the oven.  Cook for 40-60 minutes or until tender. Once they've cooled enough to handle, slice in half and scoop out the insides into a mixing bowl.  To the mixing bowl add in sugar, butter, eggs, sweetened condensed milk, and vanilla.  Your butter should be soft enough to blend up easily so nuke it in the microwave before you add it to the bowl if you need to.
You could mash it all up by hand, but an electric mixer works great.  You can also use a potato masher.  I don't like it completely pureed, so I mix it just until everything is incorporated but there are still some sweet potatoes in larger chunks.
Spread this mixture evenly into a greased 9 x 13 pan.
For the topping, combine brown sugar, coconut and pecans.  Pour melted butter over and combine.
Sprinkle evenly over the sweet potatoes in the pan.
Bake in a 350 degree oven for about 40-50 minutes.  It will be more or less depending on the size of dish you use, whether you increase the topping mixture.  The top should be nice and browned and bubbly so just keep an eye on it.

Cheesy Gratin of Brussels Sprouts

Recipe From: Family Fun Magazine

With its creamy cheese sauce and accent of bacon, this decadent recipe may tempt even the green-vegetable averse. It can be made early in the day, refrigerated, then baked before mealtime. (If you're simply not a sprout fan, you can substitute one very large head of cauliflower, cut into bite-size florets.)

4 slices of bacon
1 large onion, finely chopped
1 clove garlic, minced
2 pounds (about 7 cups, halved) fresh Brussels sprouts
1 1/2 cups milk
1 cup chicken broth
1/4 cup (4 tablespoons) unsalted butter
5 tablespoons flour
3/4 cup freshly grated Parmesan cheese
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon dried thyme
Freshly ground black pepper to taste
1 1/2 cups grated sharp white Cheddar cheese
Paprika, for garnish (optional)

Step 1
Heat a large skillet and crisp-cook the bacon. Transfer it to a plate and set it aside. Pour off all but 2 tablespoons of bacon fat from the pan. Add the onion to the pan and saute over medium heat for 6 to 7 minutes; add the garlic for the last minute. Scrape the onions and garlic into a large, shallow casserole and spread them around evenly. Set aside.

Step 2
Trim the Brussels sprouts, then cut them in half (or quarters, if very large) lengthwise. Bring a large soup pot of well-salted water to a rolling boil. Add the Brussels sprouts. Return to a boil and cook for 5 minutes. Drain immediately in a colander for 5 minutes. Transfer to the casserole, spreading the sprouts evenly in the dish. Set aside. Heat the oven to 375°.

Step 3
Combine the milk and chicken broth in a small saucepan. Bring to a simmer, then remove from the heat.

Step 4
Meanwhile, melt the butter in a large saucepan. Add the flour and cook, stirring over medium heat, for about 1 minute, until the flour is light golden brown. Whisk in half of the hot milk and broth. Heat and whisk for a minute or so, until thick. Add the remaining liquid and cook for about 5 minutes, whisking frequently.

Step 5
Whisk in the Parmesan cheese, mustard, salt, thyme, and pepper. Pour the sauce evenly over the Brussels sprouts. Mince the bacon and sprinkle it over the sauce. Sprinkle evenly with the Cheddar cheese and dust lightly with paprika, if desired.

Step 6
Place the casserole on the center oven rack and bake for 30 minutes, until bubbly and golden brown. Cool for about 5 minutes before serving. Makes 10 servings.

Turkey Meatball Soup (Jonie's)

1 cup chopped onion
1 clove garlic chopped
1 cup chopped carrot
1 cup chopped celery
1 32 oz chicken broth
4 cups half and half
1 lb ground Turkey
1 cup cheese
1/3 cup Worcestershire
1 tbl. Seasonall
Pepper
1 tbl. Flour
Pre heat oven 350 degrees
Put ground turkey in a bowl and mix in cheese, Worcestershire, seasonal, pepper.
I use my small scoop and roll in mini meatballs. Put on cookie sheet and
Bake for 10-15 minutes.
In a Dutch oven sauté onions, garlic. Add flour and cook for 1 min. Then add carrots and celery, cook til aldente or your desired softness.  Add chicken broth, half and half, bring to a boil then add cooked meatballs. Serve. If it's not thick enough make a cornstartch rue and add. I think this a favorite for the kids because it doesn't have a lot of seasonings in it. Just your basic.

SPINACH STRAWBERRY SALAD WITH POPPY SEED DRESSING AND SUGARED NUTS

Recipe From : Your Homebased Mom

INGREDIENTS
  • Salad:
  • Baby Spinach
  • Red onion, chopped (as much as you like)
  • Strawberries, sliced
  • Sugared Nuts (1/2 C nuts to 1/4 sugar)
  • Poppy Seed Dressing
  • POPPY SEED DRESSING:
  • 1/2 canola oil
  • 1/4 C apple cider vinegar
  • 1/3 C sugar
  • 2 Tbsp sesame seeds
  • 1 Tbsp poppy seeds
  • 1 1/2 tsp dried minced onion
  • 1/4 tsp Worcestershire sauce
  • 1/4 tsp paprika
INSTRUCTIONS
  • Salad:
  • Combine spinach and dressing and top with strawberries, nuts and red onion.
  • POPPY SEED DRESSING:
  • Mix together ingredients well and pour over spinach
  • SUGARED NUTS
  • Combine a 1/2 cup of nuts along with 1/4 cup of sugar in a small frying pan.Turn the heat onto medium and stir.  It will take a few minutes for anything to happen.  The sugar will begin to clump up around the nuts. And then before you know it the sugar will have totally melted and the nuts will be coated and brown.  Be careful because it can go from nothing to burned pretty fast.  Be sure and stir continuously. Spread the nuts out onto a slightly greased plate for them to cool and dry.  You will need to break them apart a bit before adding them to the salad.
